Gluten-Free Dining Out – May is Celiac Awareness Month

A genetic autoimmune disease, Celiac disease causes damage to the small intestine. This is part of the gut which digests and absorbs nutrients from food. When the small intestine is damaged, the rate of nutrient absorption from food is reduced. Celiac disease can affect people in many different ways and symptoms vary in severity. The treatment for celiac disease and gluten intolerance is simple. People who are affected must avoid foods that contain gluten and follow a gluten-free diet. Those who live with celiac disease or gluten intolerance can find it challenging to dine out. There are many articles with tips and advice on how to dine out gluten-free. What it really boils down to is knowing what you can eat and dining at an establishment that can provide it. Understand the Gluten-free Diet The first step to dining out successfully is to fully understand the gluten-free diet. You need to know what grains to avoid, the hidden sources of gluten and how to avoid cross-contact with gluten. The Celiac Disease Foundation offers great information to help take the mystery out of the gluten-free diet. Besides being very particular about what they will and won’t eat, they have a short attentions span. Sitting through an entire meal without getting up or fidgeting is almost impossible. Kids always take pride in something they make themselves and lunch or dinner is no different. We’ve come up with a way to help keep them occupied, get them to eat and may even allow the adults to relax a bit while enjoying their meal. At Tuscan Bistro Bar, a Toms River restaurant, we offer the kids the opportunity to make their own pizza. First they get to pick all of their favorite ingredients. Then they layer the crust with sauce, cheese and toppings to build their pizza. We pop it into the oven and…

Gluten Free Options in Ocean County

Here at Tuscan Bistro Bar, we value healthy living. Sometimes, it’s really hard to go out for a nice meal with family and friends and find those delicious but still healthy options. Our menu is full of just that – delicious, fresh, healthy, local food. We not only have a clean eating menu but many of our menu items are available as gluten free. Why Gluten Free? This condition causes a person to have a reaction after ingesting gluten and requires that they remove gluten from their diet.   What is Gluten? Gluten is a general name for the proteins found in wheat, rye, barley and triticale. Gluten helps foods maintain their shape, acting as a glue that holds food together. Breads, baked goods, pastas and cereals are foods you would probably expect to contain wheat. It can also be found in sauces, soups, salad dressing and roux, a blend of fat and flour used to thicken sauces. Barley can be found in malt, malt vinegar, food coloring,…
